But when locals were thrilled at the taste of its burgers, it reinvented itself as a burger joint. The secret to the spot's success is using a 2,000-year-old recipe as inspiration for a unique garum sauce (an ancient condiment made from fermented fish) that infuses its premium beef patties with unbeatable umami flavour.
